Finnish cooking: Runebergintorttu


This weekend, I had the opportunity to taste “Runebergintorttu”, typically Finnish cake pastry. Finn are used to eating Runebergintorttu on January 5th, birthday of Johan Ludvig Runeberg, this day flags are put at half-mast in the country.

Johan Ludvig Runeberg is a national poet of Finland who widely contributed to the awakening of the Finnish nationalism. Runebergintorttu was invented by his wife Fredrika.

This delicious small cake in almonds is furnished with raspberry jam as well as with a glazing on the top.
